Gatanbour - Rice Pudding


8 Cups Milk
2 Cups Water
One Cup Sugar
One 1/2 Cups Rice (any white rice except Uncle's Ben's)


Rinse rise in strainer. Place all ingredients in saucepan. Boil uncovered for 5 minutes watching not to scorch milk. A pyrex glass disc added to bottom of pan helps the mixture not to overflow. Simmer while stirring often until thickened (this could take up to 30 to 40 minutes being sure it does not burn all the while). When liquid is absorbed then place in individual cups to cool.

Dust with cinnamon.
