Varvar Ornazian is Esther Eterian's paternal grandmother. This is an old-world recipe contributed from Esther with a French/Mediterranean influence.
Media (Stuffed Mussels)


4 Quarts Mussels
2 lbs. Onions
2 Lemons
1 1/2 C Mazola Oil
1/2 C Pignolia
1/2 C Currants
1/2 Tsp. Salt
1/4 tsp. pepper
1/4 tsp.cinnamon
1/2 tsp. sugar
3/4 C Rice, washed
3/4 C Water


Clean Mussels - brush thoroughly. Chop onions and simmer with juice of lemons for 15 minutes. Add oil, stir and simmer for 10 minutes. Add nuts, currants, salt, pepper, cinnamon and sugar. Mix and simmer for 10 more minutes. Add rice and water; cook for 5 minutes. Remove from heat, cover and cool. Stuff cleaned mussels. Place in a pan and add 3/4 cup of water. Bring to a boil; reduce heat and simmer for about 1 1/2 hours. Add more water if needed. Serve chilled.
